卵とコレステロール 第2回
コレステロールを高くする原因物質のひとつに脂肪酸があります。ことに悪者は、動物質の肉や脂肪に含まれる脂肪酸のなかのミリスチン酸という物質です。
この物質は血管中のLDLコレステロールを肝臓に戻すHDLの働きを阻害し、血管内に悪玉LDLを増やしてしまう物質です。
このミリスチン酸が卵の脂肪酸にはほとんどありません。さらに卵の脂肪酸はオレイン酸でオリーブオイルやキャノーラー油、米ぬか油などの仲間で、健康志向の強い脂肪酸です。これらの脂肪は不飽和脂肪酸でバターやラードのような飽和脂肪酸と異なり代謝が活発で脂肪として蓄積されることが少ないです。
この不飽和脂肪酸には一価、二価、三価があり、二価以上のものを多価脂肪酸といいます。この多価脂肪酸はコレステロールを下げる働きがあり、代表的な
ものにオリーブのオレイン酸、紅花のリノール酸、大豆のリノレン酸があります。卵の脂肪酸もオレイン酸やアラキドン酸など多価脂肪酸です。
そのうえ卵の白身には血中コレステロールを下げるシスチンアミノ酸や、卵黄にはレシチンが多く含まれ肝臓の脂肪を減らしたり、コレステロールを抑制します。
食品とコレステロールの関係は、実際それらの食品を食べた結果の反応でしか、実証できません。
面白い評価があります。牛肉、牛乳、バターなどの食品と卵との比較で、人体の中でどの食品がコレステロールを高めるかの実験があります。

と卵が低くなっていますが、そのほかは上がります。これはバターに代表されるように、飽和脂肪酸がコレステロール値を引き上げる原因となっているからです。
卵に引き換え乳製品は結構上がりますが、発育盛りの子供には、コレステロールは必要ですから問題ありません。
ただし一般の人は卵のコレステロールは心配しますが、乳製品のコレステロールは問題にしませんがチーズも生クリームも意外と高いです。ただし発酵乳のヨーグルトはコレステロールは上がりません。
このように見てきますと、卵はかえってコレステロールをコントロールする食品ともいえますが、黄身と白身一緒の全卵で食べることが栄養的にも完全です
し、コレステロールの抑制にも役立ちます。ただしものには適量、適当ということもあり、一日に１０個も２０個も毎日食べたらこれは問題です。
健康のために一日１−２個食べることを進めます。
ところでコレステロールが高いことを医者は問題にしますが、２０００人の老人調査でコレステロールが２００−２２０の数値の人がもっとも長命であったというデータもあります。健康とは元気で活動できることです、ある程度の高さのコレステロール値がのぞましいかもしれません。
